4 cl THE DUKE Gin Sage Butter infused*

1 BL Saint German Contratto Bianco

2 cl lemon juice

1 tbsp sugar syrup

1 blister fig jam

Egg white optional


Shake all ingredients hard on ice cubes and pour into the pre-chilled guest glass. Add a dash of soda and sprinkle with some orange blossom water. Garnish with a sage leaf.

*Preparation of infusion:

75g butter and 20g sage leaves for 700 ml gin

Add liquid sage butter to the gin and let it steep for 15 minutes. Then put it in the freezer until the butter has solidified and can be filtered off.
