4 cl LION's Vodka
3 cl Salted Hazelnut White Chocolate Oregate*
1 cl Palo Santo Acid Water**
2 cl Clarified Lime
Shake all ingredients over ice, strain into a tumbler with ice and garnish with a sage leaf. Finally, grate the hazelnut over the drink.
*Preparation of Salted Hazelnut White Chocolate Oregate:
Roast 50 g hazelnuts with 2 g salt, then blind for 20 seconds. Add 1 liter of water and blend on level 4 for 5 minutes. Add 20 g melted white chocolate and blend again for 5 minutes. Strain through a kitchen sieve and a finestrainer. Add sugar 1:1 and homogenize in the blender for another 10 minutes.
**Preparation of Palo Santo Acid Water:
10g Palo Santo
10 g ascorbine
5g malic acid
Cook everything sous-vide with 1 liter of water for 3 hours at 65 °C.
