3 cl THE DUKE Munich Dry Gin
3 tsp dried chamomile flowers
3 cl boiling water
2-3 tsp honey
1.5 cl freshly squeezed lemon juice
1 Fresh egg white
2 Dashes Citrus Bitters
Pour the boiling water over the chamomile flowers and let it steep for 2 minutes. Then crush the chamomile to get all the aroma out and strain it through a fine sieve. Squeeze out all the water. Add the honey and stir until it is completely dissolved.
Pour into a shaker with the remaining ingredients and shake vigorously with ice. Pour into a cocktail glass and garnish with chamomile flowers.
