Berry Gin Collins
The Berry Gin Collins is a long drink from the collins family made with THE DUKE Wanderlust Gin, fresh berries and lime juice, shaken over ice. This is the more demanding kind: one ingredient has to be made first, so allow eight minutes or more.

Ingredients
- 5cl THE DUKE Wanderlust Gin
- 110 g fresh berries (mixed, e.g. raspberries, blueberries, blackberries)
- 3 cl lime juice
- The leaves of 3 sprigs of thyme
- 2 cl sugar syrup*
- Tonic water
Preparation
Place the berries and thyme leaves in a shaker and mash with a muddler. Add ice cubes, gin, lime juice and syrup and stir with a bar spoon. Strain the drink into a glass filled with ice, top up with tonic water and garnish with raspberries.
*Production of sugar syrup:
100g sugar
100 ml water
Heat the sugar and water in a non-stick pan, stir until the sugar has completely dissolved and then let it cool.
Only 2 cl of syrup is needed per drink. Simply fill the remaining syrup into a sealable bottle, store it refrigerated and use it for the next drinks.
