Put the mint in a shaker with the other ingredients except the ginger ale and shake vigorously with ice. Then strain into a highball glass filled with ice cubes and top up with ginger ale. Garnish with some mint before serving.
*How to make the Stinging Nettle Reduction
Add 15g of stinging nettle tea to 500 ml hot water and steep for five to ten minutes. Remove the tea bags, let the tea simmer gently in a pot over a low heat until and reduce to a third of the quantity. Then let it cool down.
