4 cl THE DUKE Gin sage-butter infused

(Infusion: add 75g butter and 20g sage leafs to 0.7l THE DUKE Gin. Let it rest for approx. 15min and put it into the fridge until the butter solidifies. Afterwards filter the liquid to extract the solid butter parts – et voilá!)

1 bar spoon St.Germain Contratto Bianco
2 cl lemon juice
1 bar spoon of sugar syrup and egg white
1 bar spoon fig jam
1 egg white (optional)

Glass: martini glass
Garnish with: sage leaves

Pour all ingredients into a shaker and add crushed ice. Shake vigorously and strain into a chilled martini glass. Add soda, a splash of orange blossom essence, and garnish with a sage leaf. Enjoy!
