Chamomile Gin Sour
Pour the boiling water over the camomile flowers and leave to stand for 2 minutes. Then crush the camomile to bring out all the flavour and strain through a fine sieve. Squeeze out all the water. Add the honey and stir until it is completely dissolved.
Put it in a shaker with the remaining ingredients and shake it vigorously with ice. Pour into a cocktail glass and garnish with camomile blossoms.
