Berry Gin Collins

Ingredients

110 g Fresh berries (mixed, e.g. raspberries, blueberries, blackberries)

3 cl Lime juice

The leaves of 3 sprigs of thyme

2 cl Sugar syrup

Tonic water

Preparation

Put the berries and thyme leaves in a shaker and crush with a muddler. Add ice cubes, gin, lime juice and syrup and stir with a bar spoon. Strain the drink into a glass filled with ice, fill up with tonic water and garnish with raspberries.

*Preparation of the Sugar syrup:

100 g Sugar

100 ml Water

Heat the sugar and water in a coated pan, stir until the sugar has completely dissolved and then allow to cool.

Only 2 cl of syrup are needed per drink. Simply pour the remaining syrup into a sealable bottle, store in a cool place and use for the next drink.
